Mayor is a product intentionally developed through the work we do at the Lab. Every Wednesday, we taste the previous week's production roasts to quality check and adjust as needed. This profile began in our Bright Series as Abuelos (now retired). While the unique washed profile held up at a lower end temperature, we saw potential to extend development time for added sweetness and a fuller body. After some trial and error, Mayor was born and it remains our most popular coffee to brew at home. This new crop comes from the Chiapas region of Mexico.
